Truffles are a type of fungi which grow close to the roots of hazel and oak trees. They are the most expensive fungus you can buy, highly valued chefs and connoisseurs for their superb flavour. Winter Truffles (Tuber melanosporum) are found widely in mainland Europe but if you have a home in the South of France, Spain or Italy you could take some with you. Winter Truffle will not grow successfully in the UK, for truffle cultivation in the UK choose a tree inoculated with the Summer Truffle which is ideal for cooler climates such as ours. The best land for truffle growing does not have any established trees, and has an alkaline soil with a ph of 7.3 to 8.3. This is the ideal but they can be successfully grown on more acid soils by applying ordinary garden lime to raise the pH. Use a pH kit to find out the pH (acidity) of your soil
